Charcuterie (n): pronounced (SHAR-KYOO-TER-EE), a French word literally meaning "cooked meat." Preparation can include curing, seasoning, fermentation, emulsification, and slicing; primarily from the pig. Usually complemented with cheese pairings, pickled vegetables, mustard or fruit jams, & some form of a carbohydrate vehicle; typically served on a wooden board.
